A Delightful Mississippi Thanksgiving

 

Hello, friends! If you’re craving comfort food that’s rich in flavor, moist, and irresistibly delicious, this Southern-style chicken and dressing straight from the heart of North Central MS is the perfect dish for you. Not only is it a staple on Thanksgiving tables across the South, but it’s also an easy-to-make recipe that will quickly become a favorite in your household. And the best part? It’s all made in a slow cooker!

Delicious, Moist, and Easy Chicken and Dressing

Serves

Serves: 12-15

Ingredients

  • 3-4 cups of shredded chicken breast, cooked (or substitute chicken for turkey)
  • 3-4 cups of chicken broth (homemade or store bought)
  • 2 pans of cornbread (2-9 inch pans or 1- 9×13)
  • 1 medium onion, chopped
  • 2 hard-boiled eggs, chopped
  • 1 stick (1/2 cup) of unsalted butter, melted
  • 2 cans of cream of chicken soup
  • 1 can of cream of celery soup
  • 2 T of dried sage
  • Poulty seasoning (to taste)
  • 2 buns (hot dog or hamburger), torn into pieces
  • Salt and pepper to taste

Instructions

STEP 1

Set to the side one can of the cream of chicken soup and the shredded chicken.

STEP 2

Crumble the cornbread into a bowl and set aside. Crumble the buns onto a plate and set aside. In a LARGE bowl, add all other ingredients (chopped onion, eggs, butter, cream of chicken soup, sage, poultry seasoning), and stir until mixed well.

STEP 3

Add the crumbled bun to the wet mixture and stir. Start adding the crumbled cornbread to the mixture 1-2 cups at a time (stir in between additions). Add the cornbread until you don’t see any liquid on the bottom. If you think it’s too thick you can add a little more broth.

STEP 4

Combine one can of the cream of celery soup and half a can of cream of chicken soup and set aside. Reserve the remaining half can of cream of chicken soup for the gravy (see link below).

STEP 5

In the bottom of a crockpot or slow cooker (6-quart), spread half of the creamed soup mixture. Top with roughly 1/3 of the cornbread dressing mixture and 1/2 of the shredded chicken. Add another 1/3 of the dressing mix and the remaining chicken. Finally, add the remaining dressing mixture. Spread the rest of the creamed soup mixture over the top and spread evenly.

STEP 6

The hard work is done! Cover the slow cooker and cook on LOW for 3 hours. Serve piping hot.

*NOTE: If you want to compliment your chicken and dressing with gravy, after mixing the dressing ingredients (and before assembling your dressing in the slow cooker), set aside one cup of the dressing mixture and 1/2 cup of the shredded chicken.
